Local Cereals-based Pastry and Bread-Making Techniques

Winrock International is looking for a Farmer-to-Farmer volunteer to support a 20-day volunteer assignment, which includes travel, in Podor, Saint-Louis, Northern Senegal. The main objective of this assignment is to train the host members in local cereals-based pastry and bread making. The training should focus on effectively developing local cereal processing skills to provide the group members with techniques on how to make pastry, bread, and other sub-products from local cereals. The training will provide them with information and skills with hands-on demonstration to create a new income-generating activity and access to a new market opportunity. This assignment will help build the capacities of women members who are parents of children with disabilities.

The volunteer should have the following qualifications and background:

Higher university degree in food science or related field

Ten years’ experience in bread making using local cereals (such as millet, sorghum, maize)

Background on developing countries’ food processing system

Strong experience in food safety approach

Experience training women

Excellent written and verbal communication skills

French language skills preferred but not mandatory
