Helping Farmers Understand Food Safety Rules

RATIONALE
The Food Safety and Inspection Service (FSIS) is the public health agency in the United States Department of Agriculture responsible for ensuring that the nation's commercial supply of meat, poultry, and egg products is safe, wholesome, and correctly labeled and packaged.

Often, small producers have difficulty understanding the requirements they must abide by to meet FSIS standards. This project will focus on a critical area of sampling and statistical process control requirements of FSIS relative to food safety and bring those requirements into focus for the operators and owners of small and very small plants.

OBJECTIVES
The project's goal is to achieve a higher level of compliance with regulatory requirements through a heightened understanding of protocol and background to the requirements and the benefits to the overall operation and success of the business as a by-product of compliance improvement.

ACTIVITIES
Winrock will be providing technical assistance for agricultural producers to help them achieve an understanding of food safety regulations and standards. Winrock will provide a final product capable of being released as a workbook or handbook as a convenient reference for operators and owners of small and very small plants.
